Marshmallows can be enjoyed year-round, but we particularly love them around the Christmas holiday and Valentine’s Day.
In fact, this exact recipe is what my daughter and I gifted our friends for Valentine’s Day in 2024! And I can easily see this becoming a tradition.

How to Make Homemade Marshmallows
If this is your first time making homemade marshmallows, don’t be intimidated! The process is very simple.
The original marshmallow recipe for this recipe comes from Abbey at abbeyverigin.com.
Ingredients
Water
Beef Gelatin
Vanilla Extract, optional
Dark Chocolate Chips
Coconut Oil
Honey
Directions
Grease a 9×13 pan with coconut oil. Set aside.
Add 1/2 cup water to a stand mixer. Sprinkle beef gelatin evenly over the water and allow it to bloom.
Add the remaining water and honey to a saucepan. Bring to a boil over medium heat, stirring frequently.
Once boiling, reduce to a simmer and simmer for 5 minutes.
Start the mixer at medium speed and slowly drizzle in the water-honey mixture.
If using, add vanilla extract.
Turn the mixer to high and whisk for 10 minutes or so, until almost stiff peaks form on the end of your whisk attachment.
The mixture will set quickly, so transfer to your greased 9×13 baking dish immediately. Smooth the top, cover, and leave on the counter overnight.
The next day, slice your marshmallows. Lay your marshmallows out on a piece of parchment paper.
Over a double boiler, melt 1/2 cup dark chocolate chips. Add 1 teaspoon of coconut oil for a glossy sheen. Stir constantly. You could also melt chocolate chips in a microwave-safe bowl. Watch your chocolate chips carefully! You don’t want to scorch them and have to start over.
When you’re dark chocolate chips have melted, remove them from the double boiler and allow them to cool slightly. (Do not let your chocolate come to room temperature! You may need to melt your chocolate all over again).
Using cake pop sticks (lollipop sticks would also do), skewer your cut marshmallows and spoon the dark chocolate mixture over your marshmallows. Return your chocolate-covered marshmallows to your parchment paper.
Cool completely.
Store your marshmallows in an airtight container at room temperature for up to a week.
For added flair, decorate your marshmallows as soon as they’ve been dipped in chocolate.
If you have excess chocolate, drizzle it onto your marshmallows! I prefer to add a second coat to my chocolate-covered marshmallows to create a great, thick, chocolate shell.

Homemade Marshmallow Variations
People today now flavor their marshmallows, or even add a layer of caramel!
For Christmas, you could easily add a layer of white chocolate drizzle. You can also add a bit of peppermint extract to your marshmallows to give them a festive flavor, perfect for the Christmas season!
Plain, chocolate-covered marshmallows also pair perfectly with hot chocolate and candy canes. These would make a great homemade gift! Pair them with a candy cane in cellophane bags as gifts for party favors.

Notes
You can sub in flavored extracts, powders, and natural food dyes to both flavor and color your marshmallows. If you're using a flavored extract, I encourage you to start in teaspoon quantities and test the flavor of your marshmallows.
You can also add caramel and peanut butter layers to your marshmallows. Simply dip your marshmallows in your favorite caramel or melted peanut butter, cool, and then dip them in melted dark chocolate.
